Ingredients
- 2 slices white bread
- 2 tablespoons butter, divided
- 2 tablespoons Dijon mustard
- 1 cup grated sharp cheddar cheese
- 1 serrano chile, finely chopped, plus a few slices for garnish
- 1/4 cup rough-chopped cilantro, plus a few leaves for garnish
- 1/2 red onion, thinly sliced
- 2 eggs
- Kosher salt as needed
Directions
Step 1: Spread 1 tablespoon of butter and Dijon mustard onto lightly toasted bread. Blend cheese, chile, cilantro, and onion in a bowl. Divide the mixture and place it onto the bread slices. Place the bread on a baking sheet.
Step 2: Set the broiler to high and place an oven rack 6 inches from the heat. Broil the bread for roughly 4 minutes – until golden brown.
Step 3: Melt 1 tablespoon of butter in a nonstick skillet over medium-high heat. Add the eggs and a sprinkle of salt. Cook for roughly 5 minutes – until the whites are firm and the yolks are runny. Place 1 egg, cilantro, and chiles on each piece of bread.
